One of the most difficult points in attempting to give a true idea of Japanese food is selecting materials that have the required characteristics but that are also easy to obtain in many lands. On this point the translator's suggestions were most helpful. We have eliminated the recipes in which peculiarly Japanese ingredients are absolutely indispensable. We were also careful to select only the dishes we feel would suit the Western palate."--
